  4. Carefully separate the skin from the turkey breast and rub the butter mixture underneath the skin.

  5. Stuff the cavity of the turkey with the sliced lemon and fresh herbs.

  6. Tie the legs together with kitchen twine and tuck the wingtips under the body.

  7. Place the turkey on a roasting rack in a large roasting pan. Cover the turkey loosely with foil.

  8. Roast the turkey in the preheated oven, basting occasionally with the pan juices.

  9. While the turkey is roasting, prepare the mashed potatoes.

  10. Boil the potatoes in a large pot of salted water until tender. Drain the potatoes and return them to the pot.

  11. Add the milk and butter to the potatoes and mash until smooth. Season with salt and pepper to taste.

  13. Add the onion, celery, dried sage, and thyme. Cook until the vegetables are softened.

  17. Once the turkey reaches an internal temperature of 165°F (74°C) and the juices run clear, remove it from the oven and let it rest for 20 minutes before carving.
