Japanese New Year Cake

Ingredients:
– 1 cup mochiko (sweet rice flour)
– 1 1/4 cups water
– 1/3 cup granulated sugar
– 1 cup sweet red bean paste
– Katakuriko (potato starch) for dusting

Instructions:
1. In a microwave-safe bowl, combine the mochiko, water, and sugar. Stir well until the mixture is smooth and there are no lumps.
2. Cover the bowl loosely with a microwave-safe lid or microwave-safe plastic wrap. Microwave the mixture on high for 3 minutes.
3. Carefully remove the bowl from the microwave and stir the mixture with a wet spatula. Ensure there are no lumps.
4. Re-cover the bowl and microwave the mixture for an additional 2 minutes.
5. Remove the bowl from the microwave and stir the mixture vigorously until smooth. The mochi should be sticky and soft.
6. Lightly dust a clean work surface with katakuriko (potato starch) to prevent sticking.
7. Transfer the mochi onto the dusted surface. Use a spatula or spoon to spread the mochi into a thin layer (about 1/4 inch thick).
8. Allow the mochi to cool slightly before cutting it into squares (approximately 2×2 inches).
9. Place a dollop of sweet red bean paste in the center of each mochi square.
10. Gather the corners of the mochi and pinch them together to enclose the red bean paste completely.
11. Shape the filled mochi into smooth, round cakes.
12. Repeat the process until all the mochi and red bean paste are used up.
