**Ingredients:**
– 1 pound boneless, skinless chicken thighs
– 2 tablespoons olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 red bell pepper, chopped
– 1 yellow bell pepper, chopped
– 1 teaspoon paprika
– 1 teaspoon cumin
– 1 teaspoon dried oregano
– Salt and pepper to taste
– 1 can black beans, drained and rinsed
– 1 cup corn kernels
– 1 cup tomato sauce
– 1 cup chicken broth
– 1 cup shredded cheese
– Fresh cilantro, chopped for garnish

**Instructions:**

1. Preheat your oven to 375°F (190°C).

2. Season the chicken thighs with salt and pepper on both sides. In a cast iron skillet over medium-high heat, heat 1 tablespoon of olive oil. Sear the chicken thighs for 3-4 minutes per side until they develop a golden brown crust. Remove the chicken from the skillet and set it aside.

6. Nestle the seared chicken thighs back into the skillet, making sure they are partially submerged in the sauce. Sprinkle the shredded cheese over the top.

7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through, and the cheese is melted and bubbly.
