Instructions:
1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with cooking spray.
2. In a large skillet, crumble the drained tofu and cook over medium heat until lightly browned, about 5-7 minutes.
3. Add the diced bell pepper, onion, and minced garlic to the skillet with the tofu. Cook for an additional 3-4 minutes until the vegetables are tender.

5. Pour 1/4 cup of enchilada sauce into the bottom of the prepared baking dish, spreading it evenly.

7. Continue filling and rolling the remaining tortillas until the baking dish is full.

9. Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and the enchiladas are heated through.
