Arizona Enchiladas

Ingredients:
– 1 pound ground beef
– 1 small onion, diced
– 1 red bell pepper, diced
– 2 cloves garlic, minced
– 1 can black beans, drained and rinsed
– 1 can diced tomatoes, drained
– 1 can green chilies
– 1 teaspoon chili powder
– 1 teaspoon cumin
– Salt and pepper, to taste
– 8-10 small flour tortillas
– 2 cups shredded cheddar cheese
– Fresh cilantro, for garnish
– Sliced avocado, for serving
– Sour cream, for serving

Instructions:
1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.

2. In a large skillet over medium heat, brown the ground beef until no longer pink. Add the diced onion, bell pepper, and garlic, and cook until the vegetables are tender.

3. Stir in the black beans, diced tomatoes, green chilies, chili powder, cumin, salt, and pepper. Let the mixture simmer for about 5 minutes to allow the flavors to meld together.

4. Take a flour tortilla and spoon a generous amount of the beef and bean mixture onto the center of the tortilla. Roll it up and place it seam side down in the prepared baking dish. Repeat with the remaining tortillas and filling.

5. Sprinkle the shredded cheddar cheese over the top of the enchiladas, covering them evenly.

6. Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.

7. Once done, remove the enchiladas from the oven and let them cool slightly. Garnish with fresh cilantro and serve with sliced avocado and sour cream on the side.
