– 1 cup water
– 1/2 cup honey

Instructions:

2. In a medium bowl, combine the mixed nuts and cinnamon. Mix well and set aside.

3. Unroll the phyllo dough carefully and place it on a clean surface. Cover the phyllo sheets with a damp kitchen towel to prevent them from drying out.

4. Place one sheet of phyllo dough in the prepared baking dish. Brush the sheet with melted butter using a pastry brush. Repeat this process with 7 more sheets, buttering each layer.

5. Sprinkle a generous amount of the nut mixture evenly over the top layer of phyllo. Continue layering with phyllo sheets and butter, followed by the nut mixture, until all the nuts are used. Make sure to end with a top layer of phyllo sheets, buttered generously.

8. While the baklava is baking, prepare the honey syrup. In a saucepan, combine the sugar, water, honey, and vanilla extract. Bring the mixture to a boil, then reduce the heat and simmer for about 10-15 minutes, until slightly thickened.

9. Once the baklava is done baking, remove it from the oven and immediately pour the hot syrup over the warm baklava, ensuring that it covers all the pieces.

10. Allow the baklava to cool and soak up the syrup for at least 4 hours or overnight.
