Barbecue Rum Ribs

Ingredients:
– 3 lbs pork baby back ribs
– 1 cup dark rum
– 1 cup barbecue sauce
– 1/2 cup brown sugar
– 1/4 cup apple cider vinegar
– 2 tbsp Worcestershire sauce
– 1 tbsp Dijon mustard
– 2 cloves garlic, minced
– Salt and pepper to taste

Instructions:
1. Preheat your grill to medium heat, around 275°F to 300°F. If using a charcoal grill, set it up for indirect heat cooking.

2. In a small bowl, mix together the barbecue sauce, dark rum, brown sugar, apple cider vinegar, Worcestershire sauce, Dijon mustard, minced garlic, salt, and pepper. This will be your flavorful marinade and basting sauce for the ribs.

3. Prepare the ribs by removing the membrane from the back of the rack. This can be done easily by sliding a knife under the membrane and then pulling it off. Trim any excess fat if needed.

4. Place the ribs in a large resealable plastic bag or shallow dish. Pour half of the marinade over the ribs, making sure they are evenly coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to penetrate the meat.

5. Once the ribs have marinated, remove them from the bag or dish and discard the used marinade. Let the ribs sit at room temperature for about 20 minutes while you prepare the grill.

6. Grease the grill grates lightly to prevent sticking. Place the ribs on the grill, bone side down, over indirect heat. Close the lid and let them cook for about 2 to 2.5 hours, or until the meat is tender and starts to pull away from the bones. Baste the ribs with the reserved marinade every 30 minutes during the cooking process.

7. Once the ribs are cooked through and have a nice caramelized glaze, remove them from the grill and let them rest for a few minutes before cutting into individual portions.

8. Serve the Barbecue Rum Ribs hot, garnished with some fresh chopped parsley or green onions, alongside your favorite sides like cornbread, coleslaw, or grilled vegetables. Enjoy the delicious flavors and the tender, fall-off-the-bone meat with your loved ones!

These Barbecue Rum Ribs are a delightful twist on classic barbecue ribs, with the added depth of flavor from the dark rum and the sweetness of the brown sugar. They are perfect for any occasion, from a casual weekend meal to a special gathering with friends. So fire up your grill and get ready to savor the deliciousness of these irresistible ribs!
