Instructions:
1. Preheat your oven to 425°F (220°C). Position the rack in the lower third of the oven.
2. In a small bowl, mix the softened butter, minced garlic, lemon zest, chopped rosemary, chopped thyme, salt, and pepper to create a herb butter.
3. Rinse the chickens under cold water and pat dry with paper towels. Place them on a roasting pan or large oven-safe skillet.
4. Using your hands, carefully loosen the skin of the chickens from the meat without removing it entirely. Divide the herb butter evenly between the two chickens, spreading it under the skin and over the top of the birds.
5. Stuff the cavities of the chickens with the quartered onion, sliced lemon, fresh rosemary, and fresh thyme sprigs.
6. Tie the legs together with kitchen twine and tuck the wings under the body of each chicken.
