Bunny Cake

Ingredients:
– 3 cups all-purpose flour
– 2 cups granulated sugar
– 1 cup unsalted butter, softened
– 4 large eggs
– 1 cup buttermilk
– 1 tablespoon baking powder
– 1 teaspoon vanilla extract
– 1/2 teaspoon salt
– Pink food coloring
– Shredded coconut
– Candy eyes
– Pink jellybeans
– Licorice
– Frosting of your choice (cream cheese frosting works well)

Instructions:
1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
2. In a bowl, whisk together the flour, baking powder, and salt until well combined. Set aside.
3. In a separate large bowl, cream together the butter and sugar until light and fluffy.
4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
6. Divide the batter evenly between the prepared cake pans.
7. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
8. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
9. Once the cakes are completely cooled, place one cake layer on a serving platter or cake stand.
10. Use a serrated knife to level the top of the cake layer.
11. Spread a layer of frosting on top of the leveled cake layer.
12. Carefully place the second cake layer on top, creating a sandwich.
13. Use a sharp knife to cut out two bunny ear shapes from the top of the cake to create the bunny’s ears.
14. Use the remaining cake to shape a bunny head and body, leaving enough space for the ears.
15. Use some frosting to attach the bunny head and ears together to form the bunny shape.
16. Frost the entire cake with a thin layer of frosting to create a crumb coat. This will help the coconut “fur” stick to the cake.
17. Gently press shredded coconut onto the frosted cake to create the bunny’s fur.
18. Add candy eyes, a pink jellybean nose, and licorice whiskers to complete the bunny face.
19. Use pink frosting to pipe on the bunny’s ears, cheeks, and any additional decorations you desire.
20. Serve and enjoy your adorable Bunny Cake!

This Bunny Cake is a delightful way to add a touch of whimsy to your spring celebrations. Kids and adults alike will love the charming design and delicious flavor of this cake. So, gather your ingredients and get ready to create a sweet and memorable dessert that is as fun to make as it is to eat. Have a hoppy baking experience!
