Chai Tea

Ingredients:
– 3 cups water
– 3 black tea bags
– 1 cinnamon stick
– 4 whole cloves
– 4 cardamom pods, lightly crushed
– 1-inch piece of fresh ginger, peeled and sliced
– 1/4 teaspoon black peppercorns
– 1/4 cup honey
– 2 cups milk (dairy or dairy-free)
– Ground cinnamon, for garnish

Instructions:
1. In a medium saucepan, bring the water to a boil over medium heat.
2. Once the water is boiling, remove the saucepan from the heat and add the black tea bags, cinnamon stick, cloves, cardamom pods, ginger slices, and black peppercorns. Let the mixture steep for 5-7 minutes to allow the spices to infuse their flavors into the water.
3. Return the saucepan to low heat and stir in the honey until it has fully dissolved.
4. Pour in the milk of your choice and continue to heat the mixture, making sure it doesn’t boil, until it is hot but not boiling.
5. Remove the saucepan from the heat and let the chai tea sit for a minute to allow the flavors to meld together.
6. Using a fine mesh strainer, strain the chai tea into a teapot or individual cups to remove the spices and tea bags.
7. Serve the chai tea hot and garnish each cup with a sprinkle of ground cinnamon for an extra touch of warmth and flavor.
8. Enjoy your homemade chai tea on its own or with a side of your favorite biscuit or scone for a cozy treat.

Chai tea is a versatile beverage that you can personalize to suit your taste preferences. If you enjoy your tea on the sweeter side, feel free to adjust the amount of honey added to the recipe. Likewise, if you prefer a stronger spice flavor, you can increase the quantities of cinnamon, cloves, or cardamom used. You can also experiment with different types of milk such as almond, oat, or coconut to find the perfect combination that suits your palate.

Bringing the warmth and comfort of a traditional Indian chai tea into your home is simple and rewarding. The blend of spices, the richness of the milk, and the sweetness of the honey all come together to create a truly delightful and aromatic beverage that is perfect for any time of the day. Make a big batch and store it in a thermos to enjoy throughout the day, or make it fresh whenever you need a comforting pick-me-up. Sip, relax, and savor the cozy flavors of homemade chai tea.
