Cherries Jubilee Pie

Ingredients:
– 1 package of store-bought pie crusts
– 4 cups of pitted fresh cherries
– 1 cup of granulated sugar
– 1/4 cup of cornstarch
– 1/4 teaspoon of almond extract
– 1 tablespoon of fresh lemon juice
– 1/4 teaspoon of ground cinnamon
– 1/4 teaspoon of salt
– 2 tablespoons of unsalted butter, cut into small pieces
– 1 egg, beaten (for egg wash)
– 1 tablespoon of coarse sugar (for topping)

Instructions:
1. Preheat your oven to 375°F (190°C) and place a baking sheet on the middle rack to heat up.

2. Roll out one of the pie crusts and fit it into a 9-inch pie dish, leaving any excess hanging over the edges. Trim off the excess dough, leaving a 1-inch overhang.

3. In a large bowl, combine the cherries, granulated sugar, cornstarch, almond extract, lemon juice, cinnamon, and salt. Mix well until the cherries are evenly coated. Let the mixture sit for about 10 minutes to allow the flavors to meld.

4. Pour the cherry filling into the prepared pie crust, making sure to spread it out evenly. Dot the top of the cherry filling with pieces of unsalted butter to add richness and flavor.

5. Roll out the second pie crust and cut it into strips to create a lattice pattern on top of the pie. Place half of the strips across the pie, leaving a small space between each strip. Fold back every other strip and place a strip perpendicular to the others. Unfold the folded strips over the new strip. Repeat with the remaining strips until the pie is covered in a lattice pattern.

6. Trim and crimp the edges of the pie to seal in the filling. Brush the lattice top with the beaten egg and sprinkle coarse sugar over the top for a shimmering finish.

7. Place the pie on the preheated baking sheet in the oven and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling. If the edges of the crust start to brown too quickly, cover them with foil to prevent burning.

8. Once the pie is done baking, remove it from the oven and let it cool on a wire rack for at least 1-2 hours to allow the filling to set before serving.

Enjoy a slice of this incredible Cherries Jubilee Pie on its own or with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special treat that will have everyone reaching for seconds. This pie is perfect for summer gatherings, holidays, or just a cozy night in. Happy baking!
