Chicken Chorizo Terrine
Ingredients:
– 1 lb ground chicken
– 8 oz chorizo sausage, casing removed
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 1 teaspoon smoked paprika
– 1/2 teaspoon cumin
– Salt and pepper to taste
– 1/4 cup fresh parsley, chopped
– 1/2 cup breadcrumbs
– 2 eggs
– 1/4 cup milk
Instructions:
1. Preheat your oven to 350°F (175°C) and grease a loaf pan. Set aside.
2. In a skillet over medium heat, cook the chorizo, breaking it up into crumbles with a spatula. Once it’s cooked through, remove it from the skillet and set it aside.
3. In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant. Remove from heat and let it cool slightly.
4. In a large mixing bowl, combine the ground chicken, cooked chorizo, sautéed onion and garlic, smoked paprika, cumin, salt, pepper, parsley, and breadcrumbs. Mix well to evenly distribute all the ingredients.
5. In a separate bowl, whisk together the eggs and milk. Pour this mixture into the chicken mixture and combine thoroughly.
6. Spoon the chicken chorizo mixture into the greased loaf pan, pressing down gently to pack it in.
7. Cover the loaf pan with aluminum foil and place it in the preheated oven. Bake for about 1 hour.
8. After an hour, remove the aluminum foil and bake for an additional 15-20 minutes or until the terrine is fully cooked and the top is nicely browned.
9. Once cooked, remove the terrine from the oven and let it cool in the pan for 15-20 minutes.
10. Carefully invert the terrine onto a serving platter. You can serve it warm or at room temperature.
