Ingredients:

– 4 poblano chiles
– 1 red bell pepper
– 1 yellow bell pepper

– 1 teaspoon of ground cumin
– 1 teaspoon of paprika
– Salt and pepper, to taste
– 1 cup of shredded Monterey Jack cheese
– Fresh cilantro, chopped, for garnish
– Lime wedges, for serving

Instructions:

1. Preheat your broiler and line a baking sheet with aluminum foil.

2. Place the poblano chiles and bell peppers on the baking sheet and broil them until the skins are charred and blistered, turning occasionally to ensure even roasting. This will take about 10-15 minutes.

3. Once the chiles and peppers are charred, remove them from the oven and place them in a bowl. Cover the bowl with plastic wrap and let the chiles steam for about 10 minutes. This will help loosen the skins for easy peeling.

4. While the chiles steam, finely chop the red onion and mince the garlic cloves. In a skillet over medium heat, sauté the onion and garlic until fragrant and translucent.

5. Add the black beans, cooked quinoa, ground cumin, paprika, salt, and pepper to the skillet. Stir well to combine and cook for another 5 minutes to allow the flavors to meld.

6. Peel the charred skin off the poblano chiles and bell peppers, then slice them open and remove the seeds. Cut the chiles and peppers into strips.

7. Preheat your oven to 375°F (190°C). In a baking dish, arrange the poblano chile strips and bell pepper strips.

8. Spoon the quinoa and black bean mixture into each chile and pepper. Top generously with shredded Monterey Jack cheese.

9. Bake the chiles in the oven for about 15-20 minutes, or until the cheese is melted and bubbly.

10. Garnish the stuffed chiles with fresh cilantro and serve hot with lime wedges on the side for squeezing over the dish.
