**Chinese Dumplings**

**Ingredients:**
– 1 pound ground chicken
– 2 cups finely chopped cabbage
– 3 green onions, thinly sliced
– 2 cloves garlic, minced
– 1 tablespoon fresh ginger, grated
– 2 tablespoons soy sauce
– 1 tablespoon sesame oil
– 1 tablespoon rice vinegar
– 1 teaspoon sugar
– 1/2 teaspoon black pepper
– 1 package round dumpling wrappers
– 2 tablespoons vegetable oil
– For dipping sauce:
– 1/4 cup soy sauce
– 2 tablespoons rice vinegar
– 1 tablespoon honey
– 1 teaspoon sesame oil
– 1 teaspoon chili paste (optional)

**Instructions:**

1. In a large mixing bowl, combine the ground chicken, cabbage, green onions, garlic, ginger, soy sauce, sesame oil, rice vinegar, sugar, and black pepper. Mix well until all ingredients are evenly distributed.

2. To assemble the dumplings, place a small spoonful of the chicken filling in the center of a dumpling wrapper. Brush the edges of the wrapper with water to help seal it. Fold the wrapper over the filling and pinch the edges to create a tight seal. Repeat this process until all the filling is used.

3. Heat vegetable oil in a large skillet over medium heat. Once hot, add the dumplings in a single layer, making sure they don’t touch each other. Cook for 2-3 minutes until the bottoms are golden brown.

4. Carefully pour 1/4 cup of water into the skillet and immediately cover with a lid to steam the dumplings. Let them cook for an additional 5-6 minutes until the water has evaporated.

5. While the dumplings are cooking, prepare the dipping sauce by whisking together soy sauce, rice vinegar, honey, sesame oil, and chili paste (if using) in a small bowl.

6. Once the dumplings are done cooking, remove them from the skillet and serve hot with the dipping sauce on the side. Enjoy!
