Cranberry Christmas Pudding

Ingredients:
– 2 cups fresh cranberries
– 1 cup sugar
– 1/2 cup water
– 1/2 cup unsalted butter, softened
– 1 cup all-purpose flour
– 1 tsp baking powder
– 1/2 tsp salt
– 1/2 cup milk
– 1/2 cup chopped pecans
– 1/2 cup raisins
– 1/2 tsp ground cinnamon
– 1/4 tsp ground nutmeg
– Vanilla ice cream or whipped cream for serving

Instructions:
1. Preheat your oven to 350°F (175°C) and grease a 9-inch square baking dish.

2. In a medium saucepan, combine the cranberries, sugar, and water. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens slightly, about 10-15 minutes. Remove from heat and set aside to cool.

3. In a mixing bowl, cream the butter until smooth. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the butter, alternating with the milk, until fully incorporated.

4. Stir in the chopped pecans, raisins, cinnamon, and nutmeg until well combined. The batter will be thick.

5. Spread half of the batter into the prepared baking dish, smoothing it out to create an even layer. Spoon the cranberry mixture over the batter, spreading it gently with a spatula.

6. Drop the remaining batter by spoonfuls over the cranberry layer. It’s okay if the batter doesn’t completely cover the cranberries – it will spread and rise during baking.

7. Bake the pudding for 45-50 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

8. Allow the Cranberry Christmas Pudding to cool slightly before serving. It’s delicious on its own but even better topped with a scoop of vanilla ice cream or a dollop of whipped cream.

Enjoy the warmth and comfort of the holiday season with this Cranberry Christmas Pudding. Its sweet and tart flavors will bring joy to your gatherings and have everyone asking for seconds. Serve it at your next holiday dinner or enjoy it as a cozy treat on a chilly winter night. Happy baking!
