Delicious Vegan Spring Rolls

Instructions:
1. Prepare all the vegetables by shredding, slicing, and julienning them into thin strips. Cook the vermicelli noodles according to package instructions and set aside to cool.
2. Fill a shallow dish with warm water. Dip a rice paper wrapper into the water for about 15-20 seconds until it softens. Place it on a clean, damp kitchen towel or a smooth surface.
3. Start by layering a small amount of purple cabbage on the bottom third of the rice paper wrapper, leaving some space at the edges to fold.
