Harvest Vegan Nut Roast

Ingredients:
– 1 cup quinoa, rinsed
– 2 cups vegetable broth
– 1 cup walnuts, chopped
– 1 cup pecans, chopped
– 1 cup almonds, chopped
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 1 carrot, grated
– 1 celery stalk, finely chopped
– 1 red bell pepper, diced
– 1 cup mushrooms, chopped
– 1 tablespoon flaxseed meal mixed with 3 tablespoons water (flax egg)
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 1 teaspoon paprika
– Salt and pepper, to taste
– Olive oil, for cooking

Instructions:
1. Preheat the oven to 350°F (175°C) and grease a loaf pan with olive oil.
2. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15-20 minutes, or until all the liquid is absorbed and the quinoa is cooked. Fluff with a fork and set aside.
3. In a large skillet, heat some olive oil over medium heat. Add the onions and garlic, and sauté until fragrant and translucent.
