Holiday Pie
Ingredients:
– 2 1/2 cups all-purpose flour
– 1 cup unsalted butter, cold and cubed
– 1/2 cup ice water
– 1/2 cup granulated sugar
– 1/4 cup brown sugar
– 1 tablespoon cornstarch
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/4 teaspoon salt
– 6 cups mixed, peeled, and sliced apples (such as Granny Smith, Honeycrisp, and Gala)
– 1 tablespoon lemon juice
– 1 tablespoon butter, melted
– 1 egg, beaten (for egg wash)
– Sparkling sugar for sprinkling
Instructions:
1. In a large mixing bowl, combine the flour and cold, cubed butter. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.
2. Gradually add the ice water, a little at a time, mixing until the dough comes together. Be careful not to overwork the dough. Divide the dough into two equal portions, shape into disks, cover with plastic wrap, and refrigerate for at least 1 hour.
3. Preheat the oven to 375°F (190°C). Roll out one disk of dough on a lightly floured surface to fit a 9-inch pie dish. Place the dough into the pie dish, pressing it gently to fit. Trim any excess dough from the edges and set aside.
4. In a separate bowl, combine the granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, and salt. Mix well.
5. In a large mixing bowl, toss the sliced apples with lemon juice. Add the sugar mixture to the apples and toss until the apples are evenly coated.
6. Arrange the apple mixture in the prepared pie crust, mounding slightly in the center. Drizzle with melted butter.
7. Roll out the second disk of dough and place it over the filling. Trim any excess dough and crimp the edges to seal. Cut a few slits on the top crust to vent steam. Brush the crust with the beaten egg and sprinkle with sparkling sugar.
8. Place the pie on a baking sheet to catch any drips and bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbly.
9. Allow the pie to cool on a wire rack before serving. Serve warm with a scoop of vanilla ice cream for the perfect holiday treat.
This Holiday Pie is a wonderful way to celebrate the season with family and friends. Whether you’re hosting a festive gathering or simply craving a taste of the holidays, this pie is a must-try recipe that will bring smiles to everyone around your table. Enjoy the magic of the holidays with each delicious bite of this flavorful and comforting pie.
