Kakaové Koláčky Cocoa Pastries

Instructions:
1. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
2. In a separate larger mixing bowl, cream the softened butter and powdered sugar together until light and fluffy.
3. Add the egg yolk and vanilla extract to the butter mixture, beating until well combined.
4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. It may be slightly crumbly, but should hold together when pressed.
5. Divide the dough into two equal portions, shaping each into a disc. Wrap them in plastic wrap and chill in the refrigerator for at least 1 hour or until firm.
6. Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
7. Roll out one disc of dough on a floured surface to about 1/4 inch thickness. Use a round cookie cutter or a glass to cut out circles.
8. Transfer the circles to the prepared baking sheets, spacing them about 1 inch apart.
9. Spoon a small amount of fruit preserves into the center of each circle, leaving a border around the edges.
10. Roll out the second disc of dough and cut out an equal number of circles. Place them on top of the preserves-filled circles, gently pressing the edges to seal.
11. Bake the Kakaové Koláčky in the preheated oven for 12-15 minutes, or until the edges are set.
12. Allow the pastries to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
13. Once cooled, dust the pastries lightly with powdered sugar for a festive finish.
