Mediterranean Vegetable Tart
Ingredients:
– 1 sheet of store-bought puff pastry, thawed
– 1 zucchini, thinly sliced
– 1 yellow squash, thinly sliced
– 1 red bell pepper, thinly sliced
– 1 small eggplant, thinly sliced
– 1/2 cup cherry tomatoes, halved
– 1/4 cup black olives, pitted and sliced
– 1/4 cup crumbled feta cheese
– 2 tbsp olive oil
– 2 cloves garlic, minced
– 1 tsp dried oregano
– Salt and pepper to taste
– Fresh basil leaves for garnish
Instructions:
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the garlic and sauté for about 1 minute until fragrant.
3. Add the zucchini, yellow squash, bell pepper, and eggplant to the skillet. Season with dried oregano, salt, and pepper. Cook for about 5-7 minutes until the vegetables are tender. Remove from heat and set aside.
