Whether you’re hosting a backyard barbecue or simply looking to elevate your weekday dinner, these skewers are sure to add a touch of exotic flair to your meal.

Moroccan Grilled Vegetable Skewers

Ingredients:
– 2 zucchinis, sliced into rounds
– 1 eggplant, cubed
– 1 red bell pepper, cut into chunks
– 1 yellow bell pepper, cut into chunks
– 1 onion, cut into wedges
– 8-10 cherry tomatoes
– 1/4 cup olive oil
– 2 cloves of garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon paprika
– 1/2 teaspoon ground coriander
– Salt and black pepper to taste
– Fresh parsley, chopped (for garnish)

Instructions:
1. Preheat your grill to medium-high heat, making sure the grates are clean to prevent sticking.

2. In a small bowl, whisk together the olive oil, minced garlic, ground cumin, paprika, ground coriander, salt, and black pepper. This flavorful marinade will be the key to infusing the vegetables with Moroccan-inspired spices.

3. Thread the marinated vegetables onto skewers, alternating between the zucchini rounds, eggplant cubes, bell pepper chunks, onion wedges, and cherry tomatoes. This not only creates a visually appealing arrangement but also ensures that each skewer offers a variety of textures and flavors.

4. Place the assembled skewers on the preheated grill, making sure to leave some space between each skewer to allow for even cooking. Close the lid and grill for about 10-15 minutes, turning the skewers occasionally to ensure all sides are nicely charred and the vegetables are tender.

5. Once the vegetables are beautifully grilled and infused with smoky flavors, carefully remove the skewers from the grill and place them on a serving platter. Sprinkle the freshly chopped parsley over the top for a pop of color and freshness.

6. Serve the Moroccan Grilled Vegetable Skewers hot, either as a standalone dish or alongside your favorite main course. These skewers are versatile and pair well with grilled meats, couscous, or a refreshing salad.

Grilling these Moroccan-inspired skewers not only brings out the natural sweetness of the vegetables but also allows the spices to create a harmonious blend of flavors that will transport you to the exotic markets of Marrakech. Whether you’re a seasoned grill master or a novice looking to try something new, these vegetable skewers are a wonderful way to introduce a taste of Morocco to your culinary repertoire. Enjoy them with friends and family, savoring the vibrant colors and fragrant aromas that make this dish a true delight for all the senses.
