Ingredients:
– 1 whole organic chicken, around 4 lbs
– 2 cups chicken broth
– 4 large carrots, peeled and sliced

– 1 teaspoon salt
– 1/2 teaspoon black pepper

Instructions:
1. Preheat your oven to 375°F (190°C). Lightly grease a roasting pan with olive oil and set aside.
2. Rinse the whole chicken under cold water and pat it dry with paper towels. Season the chicken inside and out with salt, pepper, dried thyme, and dried rosemary.
3. Place the chicken in the prepared roasting pan breast side up. Tuck the wing tips under the body to prevent burning.
4. In a large bowl, toss the sliced carrots, chopped celery, diced onion, and minced garlic with olive oil. Season the vegetable mixture with a pinch of salt and pepper.
5. Spread the seasoned vegetables around the chicken in the roasting pan. Pour the chicken broth over the vegetables.
6. Cover the roasting pan with aluminum foil and place it in the preheated oven. Roast for 1 hour covered.
7. After 1 hour, remove the foil from the roasting pan and baste the chicken with the juices from the bottom of the pan. Return the pan to the oven and roast uncovered for an additional 30-40 minutes, or until the chicken is golden brown and the juices run clear.
8. Remove the roasting pan from the oven and let the chicken rest for 10 minutes before carving.
9. While the chicken is resting, add the frozen peas to the hot vegetable mixture in the roasting pan. Stir well to combine and allow the peas to warm through.
10. Carve the chicken into serving pieces and plate with a generous spoonful of the vegetable medley. Garnish with fresh parsley before serving.
