5. Cut the curds into 1-inch cubes, then slowly heat the curds and whey over low heat to 105°F, stirring gently to prevent matting.
6. Remove the pot from the heat and continue to gently stir the curds for 5 minutes. Let the curds rest for another 5 minutes.
7. Using a slotted spoon, transfer the curds to a microwave-safe bowl. Microwave the curds for 1 minute, then knead the curds like dough to distribute heat evenly.
8. Microwave the curds for an additional 30 seconds. Drain off the excess whey.
