Ingredients:
– 2 cups crushed chocolate sandwich cookies
– 1/4 cup unsalted butter, melted
– 24 oz cream cheese, softened
– 1 cup granulated sugar
– 1 tsp peppermint extract
– 3 large eggs
– 1 cup sour cream
– 1/2 cup crushed peppermint candy canes
– Whipped cream, for topping
– Additional crushed candy canes, for garnish

Instructions:
1. Preheat your oven to 350°F (175°C) and line the bottom of a 9-inch springform pan with parchment paper.
2. In a medium bowl, combine the crushed chocolate sandwich cookies and melted butter until well mixed. Press the mixture onto the bottom of the prepared pan to form the crust. Chill in the refrigerator while you prepare the filling.
3. In a large mixing bowl, beat the cream cheese until smooth using an electric mixer. Add in the sugar and peppermint extract, and continue to mix until well combined.
4. Beat in the eggs, one at a time, making sure each egg is fully incorporated before adding the next.
5. Gently fold in the sour cream until just combined. Be careful not to overmix.
6. Stir in the crushed peppermint candy canes, reserving some for garnish later.
7. Pour the cheesecake filling over the chilled crust in the pan, spreading it evenly with a spatula.
8. Place the springform pan on a baking sheet and bake in the preheated oven for about 45-50 minutes, or until the center is almost set.
9. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about an hour.
10. Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight to set.
11. Before serving, carefully remove the cheesecake from the pan, and top it with whipped cream and additional crushed candy canes for garnish.
