Salmon Bowl
Ingredients:
– 1 cup cooked quinoa
– 1 small cucumber, sliced
– 1 medium carrot, grated
– 1/2 avocado, sliced
– 1/4 cup edamame, shelled
– 4 oz salmon fillet
– 1 tablespoon soy sauce
– 1 teaspoon sesame oil
– 1 tablespoon honey
– 1 teaspoon grated fresh ginger
– Sesame seeds and chopped green onions for garnish
Instructions:
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Place the salmon fillet on the prepared baking sheet. In a small bowl, whisk together the soy sauce, sesame oil, honey, and grated ginger. Pour this mixture over the salmon, making sure it is evenly coated.
3. Bake the salmon in the preheated oven for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
4. While the salmon is baking, assemble the rest of your bowl. Divide the cooked quinoa into two bowls.
5. Arrange the sliced cucumber, grated carrot, sliced avocado, and edamame on top of the quinoa in an aesthetically pleasing way.
6. Once the salmon is done, flake it into large chunks and place it on top of the veggies in the bowls.
7. Drizzle any remaining sauce from the baking sheet over the salmon bowls. Sprinkle with sesame seeds and chopped green onions for an extra burst of flavor.
