Santa Fe Steak

Ingredients:
– 4 boneless ribeye steaks
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 teaspoon chili powder
– 1 teaspoon cumin
– 1 teaspoon paprika
– 1/2 teaspoon onion powder
– Salt and pepper to taste

For the Corn and Black Bean Salsa:
– 1 cup corn kernels (fresh or frozen)
– 1 can black beans, rinsed and drained
– 1 red bell pepper, diced
– 1/4 cup red onion, finely chopped
– 1/4 cup fresh cilantro, chopped
– Juice of 1 lime
– Salt and pepper to taste

Instructions:
1. In a small bowl, combine olive oil, minced garlic, chili powder, cumin, paprika, onion powder, salt, and pepper. Mix well to form a marinade.
2. Place the ribeye steaks in a shallow dish or resealable plastic bag. Pour the marinade over the steaks, making sure they are well coated. Cover or seal and refrigerate for at least 2 hours, or overnight for best flavor.
3. Preheat your grill to medium-high heat.
4. In the meantime, prepare the corn and black bean salsa. In a mixing bowl, combine corn, black beans, red bell pepper, red onion, cilantro, lime juice, salt, and pepper. Toss gently to mix all ingredients. Set aside.
5. Remove the steaks from the marinade and discard the excess marinade.
6. Grill the steaks for about 4-5 minutes per side, or until they reach your desired level of doneness. For a medium-rare steak, aim for an internal temperature of 130°F.
7. Once the steaks are done, transfer them to a plate and let them rest for a few minutes before serving.
8. Serve the grilled Santa Fe Steaks with a generous spoonful of the corn and black bean salsa on top. You can also serve with your favorite side dishes like rice, salad, or tortillas.
