**Instructions:**
1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
2. In a skillet over medium heat, sauté the chopped onion until it’s soft and translucent.

10. Pour the remaining enchilada sauce over the entire stack and make sure all the tortillas are covered.
11. Sprinkle the remaining cheese on top, making sure to cover the entire stack.
12. Cover the baking dish with foil and bake in the preheated oven for about 25-30 minutes, until the cheese is melted and bubbly.
13. Remove the foil and bake for an additional 5-10 minutes until the cheese is golden and crispy.
14. Let the stacked enchiladas cool slightly before serving.
15. Garnish with freshly chopped cilantro and sliced jalapeños if you like an extra kick.
