Stroganoff

Ingredients:
– 1 lb beef sirloin, thinly sliced
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 8 oz white mushrooms, sliced
– 1 cup beef broth
– 1 cup sour cream
– 2 tbsp all-purpose flour
– 2 tbsp butter
– 1 tbsp olive oil
– Salt and pepper to taste
– 1 tsp paprika
– Fresh parsley, chopped, for garnish
– 12 oz egg noodles, cooked and drained

Instructions:
1. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat.
2. Add the sliced beef sirloin to the skillet and cook until browned, about 5-6 minutes. Remove the beef from the skillet and set aside.
3. In the same skillet, add the remaining butter and sauté the chopped onion and garlic until fragrant and translucent, about 3-4 minutes.
4. Add the sliced mushrooms to the skillet and cook until they have released their liquid and are golden brown, about 5-6 minutes.
5. Sprinkle the flour over the mushroom mixture in the skillet and stir well to combine. Cook for another 2 minutes to cook out the raw flour taste.
6. Gradually pour in the beef broth while stirring constantly to avoid lumps. Allow the mixture to come to a gentle simmer.
7. Return the cooked beef to the skillet and season with salt, pepper, and paprika. Stir well to combine all the ingredients.
8. Reduce the heat to low and let the mixture simmer for about 10-15 minutes, stirring occasionally, until the sauce has thickened slightly.
9. Turn off the heat and stir in the sour cream until completely incorporated into the sauce. Be careful not to let the sauce boil at this stage.
10. Serve the Stroganoff over cooked egg noodles, garnished with fresh chopped parsley.
