Veal Birds

Veal Birds

Ingredients:

– 4 veal scallopini, pounded thin
– 1 cup breadcrumbs
– 2 tablespoons chopped parsley
– 1/4 cup grated Parmesan cheese
– 4 slices prosciutto
– 4 slices fontina cheese
– Salt and pepper to taste
– 2 tablespoons olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 carrot, chopped
– 1 stalk celery, chopped
– 1 cup chicken broth
– 1/2 cup white wine
– 1 bay leaf
– 2 sprigs fresh thyme

Instructions:

1. In a bowl, mix together breadcrumbs, parsley, Parmesan cheese, salt, and pepper. Lay out veal scallopini and season with salt and pepper. Spread breadcrumb mixture over each scallopini.

2. Place a slice of prosciutto and fontina cheese on top of each veal scallopini. Roll up each piece, securing with toothpicks to form little bundles.

3. In a large skillet, heat olive oil over medium heat. Brown veal birds on all sides for about 5 minutes.

4. Remove veal birds from the skillet and set aside. In the same skillet, sauté onion, garlic, carrot, and celery until softened.

5. Pour in chicken broth and white wine, scraping up any browned bits from the bottom of the pan. Add bay leaf and thyme sprigs. Bring to a simmer.

6. Return veal birds to the skillet, cover, and let simmer for about 20-25 minutes, or until veal is cooked through.

7. Remove veal birds from the skillet and let rest for a few minutes. Discard toothpicks.

8. For the gravy, remove the bay leaf and thyme sprigs from the skillet. Blend the vegetables and liquid in the skillet until smooth to create a rich gravy.

9. Serve the veal birds with a generous spoonful of gravy poured over the top. Garnish with additional parsley if desired.
