Almond Strawberry Shortcake Stars

Instructions

1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

2. In a large mixing bowl, whisk together the flour, sugar, almond meal, baking powder, and salt until well combined.

3. Add the cold, cubed butter to the dry ingredients and use a pastry cutter or your fingers to work the butter into the mixture until it resembles coarse crumbs.

4. In a separate bowl, combine the milk and almond extract. Gradually pour the wet ingredients into the dry ingredients, stirring until a dough forms.

5. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.

6. Roll out the dough to about 1/2 inch thickness and use a star-shaped cookie cutter to cut out the shortcake stars. Place them on the prepared baking sheet.

7. Bake the shortcake stars for 12-15 minutes or until they are golden brown. Allow them to cool slightly on a wire rack.

8. To assemble, split the shortcake stars in half horizontally. Place a spoonful of sliced strawberries on the bottom half, then top with a dollop of whipped cream before sandwiching with the top half of the shortcake.
